  • 6 cups chopped romaine lettuce

  • 1 avocado, sliced

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey, optional
  • Salt and black pepper, to taste

How to Make It

  1. Prepare the chicken. Slice thick breasts horizontally into evenly thick cutlets. Mix the oil, lemon juice, garlic, oregano, salt, and pepper. Coat the chicken and refrigerate for 20–30 minutes.
  2. Heat the grill. Preheat a grill or grill pan over medium-high heat. Lightly oil the cooking surface.
  3. Grill the chicken. Remove the chicken from the marinade, letting excess drip off. Grill for approximately 4–6 minutes per side, depending on thickness, until the center reaches 165°F (74°C). Discard the used marinade.
  4. Let it rest. Transfer the chicken to a clean plate and rest for 5 minutes before slicing.
  5. Mix the dressing. Whisk the olive oil, lemon juice, mustard, and optional honey. Season to taste.
  6. Assemble. Combine lettuce, cucumber, tomatoes, and red onion. Toss lightly with dressing, then top with avocado and sliced chicken. Serve immediately.

Tips for a Better Salad

Cook evenly thick chicken pieces so they finish at a similar time. Dry the washed lettuce thoroughly to keep the dressing from becoming watery.

If preparing ahead, keep the chicken, vegetables, and dressing separate. Slice the avocado just before serving and dress only the portions you plan to eat.
