For the Sauce
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 red bell pepper, finely diced
- 2 garlic cloves, minced
- 1 can crushed tomatoes (14 ounces)
- ½ teaspoon dried oregano
- Salt and black pepper, to taste
For the Vegetable Layers
- 1 slender medium eggplant
- 2 medium zucchini
- 4 Roma tomatoes
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh basil, for serving
How to Make It
- Prepare the oven. Preheat to 375°F (190°C).
- Make the sauce. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook the onion and bell pepper for 6–8 minutes until softened. Add garlic and cook for 30 seconds.
- Simmer. Stir in crushed tomatoes, oregano, salt, and pepper. Simmer for 8–10 minutes, then spread in a roughly 10-inch round baking dish.
- Slice the vegetables. Cut the eggplant, zucchini, and Roma tomatoes into approximately ⅛-inch-thick slices. Aim for similar thickness so they cook evenly.
- Arrange the layers. Alternate the vegetable slices in overlapping rows or circles over the sauce.
- Season. Drizzle with the remaining olive oil and sprinkle with thyme, salt, and pepper.
- Bake covered. Cover tightly with foil and bake for 40 minutes. Uncover and bake for another 20–30 minutes, until the vegetables are tender, especially the eggplant. Cover again and continue cooking if needed.
- Finish. Rest for 10 minutes, then scatter fresh basil over the top.
Tips for Tender Vegetables
Choose vegetables of similar diameter for easier arranging. Thin, even slices matter more than a perfect pattern.
Check the eggplant with a fork before serving—it should be soft throughout. If the vegetables begin browning before they become tender, cover the dish again to retain moisture.
Easy Variations
Replace one zucchini with yellow summer squash for extra color. For a little heat, add a pinch of red pepper flakes to the tomato sauce.
