Creamy Chicken Enchiladas

These creamy chicken enchiladas combine tender shredded chicken, mild green chiles, and melted cheese inside soft tortillas. A simple sour cream sauce keeps the filling moist and gives the dish a comforting finish. Use fully cooked halal chicken for an easy family dinner, then serve with rice, salsa, or a fresh salad.

Ingredients

Serves: 4–6
Makes: 8 enchiladas

For the Filling

  • 3 cups fully cooked, shredded halal chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 can mild diced green chiles, drained (4 ounces)
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 8 medium flour tortillas

For the Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups halal chicken broth
  • ¾ cup sour cream, at room temperature
  • Salt and black pepper, to taste

For the Topping

  • 1 cup shredded Monterey Jack cheese
  • Chopped cilantro or green onions, optional

Choose halal-certified cheese or cheese made with suitable microbial or vegetarian rennet.

How to Make Them

  1. Prepare the oven. Preheat to 375°F (190°C). Lightly grease a 9-by-13-inch baking dish.
  2. Mix the filling. Combine chicken, 1 cup cheese, green chiles, cumin, and garlic powder.
  3. Make the sauce. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in broth and gently simmer for 3–5 minutes, until lightly thickened.
  4. Add sour cream. Remove the saucepan from the heat and let the bubbling stop. Whisk in the sour cream until smooth. Taste and season with salt and pepper.
  5. Fill the tortillas. Spread a little sauce across the bottom of the baking dish. Divide the chicken mixture among the tortillas, roll them up, and place seam-side down.
  6. Add the topping. Pour the remaining sauce evenly over the enchiladas, coating the tortillas. Sprinkle with the remaining cup of cheese.
  7. Bake. Bake for 25–30 minutes, until bubbling and the filling reaches 165°F (74°C). Loosely cover with foil if the top browns too quickly.
  8. Serve. Rest for 5 minutes, then finish with cilantro or green onions if desired.

Tips for Creamy Enchiladas

Warm the tortillas briefly before filling so they roll without tearing. Add sour cream off the heat and avoid boiling the sauce afterward to help keep it smooth.

If your cooked chicken is dry, stir a few tablespoons of sauce into the filling before rolling.

Easy Variations

Add ½ cup drained corn or black beans to the filling for extra texture. For more heat, use medium green chiles or serve with your favorite hot sauce.
