Serves: 6–8 as an appetizer
- 4 fully cooked halal duck confit legs
- 3–5 tablespoons melted duck fat, plus extra for coating
- 2 tablespoons finely chopped parsley
- 1 teaspoon fresh thyme leaves
- ½ teaspoon finely grated lemon zest
- ¼ teaspoon black pepper
- Salt, only if needed
How to Make It
- Warm the duck. Gently warm the confit legs according to their preparation or package instructions until the meat pulls easily from the bones.
- Shred the meat. Remove the bones, skin, and any cartilage. Shred the meat finely.
- Mix the filling. Add parsley, thyme, lemon zest, pepper, and 3 tablespoons duck fat. Mix well, adding a little more fat if needed so the meat holds together when pressed. Taste before adding salt.
- Pack the pan. Line a small loaf pan with food-safe plastic wrap, leaving an overhang. Pack in the duck firmly, smoothing the top. Spoon over a thin layer of duck fat.
- Press and chill. Fold the wrap over the filling. Place a small flat weight on top and refrigerate for at least 8 hours.
- Serve. Unmold and cut with a sharp knife. If it crumbles, serve it as a rustic spread rather than neat slices.
Tips for the Best Texture
Use finely shredded meat and press it firmly to reduce air pockets. Duck fat helps bind the filling as it chills, but this gelatin-free terrine will have a softer, more rustic structure than a traditional firm terrine.
Serving Ideas
Serve small portions with toasted bread, pickled vegetables, and Dijon mustard. A lightly dressed salad balances the richness of the duck.
