  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Cut the salmon fillet into bite-sized pieces and pat them dry with paper towels.
  2. Set Up the Breading Station: In one bowl, combine flour, garlic powder, salt, and pepper. In a second bowl, whisk the egg. In a third bowl, spread the panko breadcrumbs.
  3. Bread the Salmon: Dip each piece of salmon first in the flour mixture, then in the egg, and finally coat it in panko breadcrumbs. Ensure each piece is thoroughly coated.
  4. Fry the Salmon: Heat oil in a frying pan over medium heat. Cook salmon bites in batches for about 2-3 minutes on each side until golden brown and crispy.
  5. Make the Bang Bang Sauce: In a bowl, mix mayonnaise, sweet chili sauce, and sriracha. Adjust the sriracha for desired spice level.

Fry in batches to maintain crispiness. Overcrowding the pan makes them soggy. For a healthier version, bake the salmon bites at 400°F (200°C) for 15-20 minutes with a drizzle of oil.
