Description

Easter morning at our house always calls for something special on the breakfast table, and these Puff Pastry Easter Nests have become our newest tradition. Flaky, buttery pastry cradles a sweet cream cheese filling and fresh spring berries in a treat that looks impressive but comes together with surprising ease.


Ingredients

  • 2 sheets puff pastry, thawed according to package directions
  • 1 large egg, beaten with 1 tablespoon water
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey or maple syrup
  • Fresh mint leaves for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Unfold puff pastry on floured surface and roll gently to smooth creases. Cut each sheet into 4 squares (8 total).
  3. Cut four slits in each square from corners toward center. Fold right-hand corners into center to create pinwheel nest shape. Press center to seal.
  4. Place nests on baking sheets, spaced apart. Mix sugar and cinnamon if using. Brush nests with egg wash and sprinkle with cinnamon sugar.
  5. Bake for 15–18 minutes until golden. Press center gently with spoon to flatten. Cool completely on wire racks.
  6. Beat cream cheese until fluffy. Add powdered sugar, vanilla, lemon zest, and juice. Mix until creamy. Chill until ready to use.
  7. Wash and dry berries. Quarter strawberries, leave others whole. Toss with honey or maple syrup.
  8. Spoon or pipe 2 tablespoons of filling into each nest. Top with berries. Garnish with mint and dust with powdered sugar before serving.

Notes

Store baked pastry shells in airtight container at room temp for up to 1 day. Cream cheese filling keeps in fridge for 2 days. Best assembled right before serving for optimal texture and appearance.
