Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 cups fresh or frozen mixed berries (do not thaw if frozen)
  • Optional: 1 tbsp sugar for tart berries
  • Optional: 1 tsp lemon zest
  • For the crumb topping:
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ tsp cinnamon
  • 4 tbsp cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
  2. Cream butter and granulated sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  3. Whisk flour, baking powder, and salt in a separate bowl. Add to wet mixture alternately with milk, mixing just until combined.
  4. Gently fold in berries and optional zest. Pour batter into prepared pan and smooth the top.
  5. For the crumb topping, mix flour, sugars, and cinnamon. Cut in cold butter until crumbly. Sprinkle evenly over batter.
  6. Bake 35–40 minutes, until a toothpick comes out clean. Cool 10–15 minutes before slicing.

Notes

Store covered at room temperature for up to 2 days or refrigerate for 4–5 days. Freezes well. Great served warm or chilled with a scoop of vanilla ice cream.
