Description

These berry custard tartlets blend silky vanilla custard, crisp tart shells, and vibrant fresh berries for a show-stopping dessert perfect for brunches, holidays, or elegant gatherings.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 23 tablespoons ice water
  • 1/4 teaspoon salt
  • 1 1/4 cups whole milk
  • 3 egg yolks
  • 1/3 cup granulated sugar (divided)
  • 1 tablespoon cornstarch
  • 1 teaspoon pure vanilla extract or seeds from 1 vanilla bean
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tablespoons apricot jam (optional, for glaze)
  • Powdered sugar, for garnish (optional)

Instructions

  1. Prepare tart shells: In a bowl, cut cold butter into flour and salt until crumbly. Add ice water gradually until dough comes together. Chill 30 minutes.
  2. Roll dough and press into mini tartlet pans. Chill again 15 minutes. Blind bake at 375°F (190°C) for 15 minutes with pie weights, then 5 minutes uncovered. Cool completely.
  3. Make custard: Heat milk with half the sugar and vanilla. In a bowl, whisk yolks with remaining sugar and cornstarch until pale.
  4. Temper egg mixture with warm milk while whisking. Return to saucepan and cook on low, stirring constantly, until thickened and coats back of spoon.
  5. Strain custard through fine sieve. Let cool slightly, then fill cooled tart shells. Smooth tops and refrigerate 2 hours to set.
  6. Top each tartlet with fresh berries before serving. For glossy finish, brush lightly with warmed apricot jam. Dust with powdered sugar if desired.

Notes

Tart shells and custard can be prepared a day ahead. Assemble with berries shortly before serving for best freshness and texture.
